I asked Gary about the Toccata and Fugue and he said the reason he sometimes plays classical pieces at soundcheck is that he needs to hear his own sound: and if he plays Procol music everybody starts to play, so he can't hear himself properly. If he plays classical, '...only Matthew knows it ...'
